1 cup old fashioned rolled oats
1 cup medjol dates
2 small or 1 medium ripe bananas
2 tbs peanut butter
1 tbs organic vegan cocoa powder
1 cup nuts of choice (I used raw almond and raw walnuts)
1 tbs flaxseed seeds
2 tbs of plant milk (I used almon-coconut)
1 tbs raw organic brown sugar (optional)
Preparation and cooking
Add all ingridients in a food processor/blender (I used my Vitamix).
Mix until there are only a few small chunks, not completely creamy.
Pour the mixture in a bowl, mix with a fork, add more oats if too wet.
Chill the mixture in the freezer for 10 minutes. (It helps to manage the dough and form into cookies)
Preheat oven to 350F.
Wet your hands with water, take a small quantity of the mixture, form first into a ball, then flatten. Arrange on a cookie sheet lined with parchment paper.
Bake for 20 minutes, turn and bake for an additional 10 minutes.
Cool and serve with a glass of plant milk of your choice. Enjoy!
*This is a recipe I adapted from a couple of recipes on the web. Using a food processor/ blender makes the texture better than just mixing with a fork. My son loved the cookies so much he asked me to make them again today! We decided to call them “Mother’s day cookies)
